Hello sweets, what is your favorite fruit? Mine are all red fruits, but especially raspberry! I love raspberry desserts! There are no exceptions and these cupcakes are really special! They are perfect for any occasion! And this presentation is very flirty that no one can resist in eating them!
I’m addicted to the macaroons and I always want to combine them with other desserts, the performance and the result was excellent. The recipe of my macaroons can be found in the previous post.
- 1 Cup Granulated Sugar
115 grs. Un-Salted Butter.
2 tsp Vanilla Extract
2 tsp Baking Powder
1 1/3 Cups All Purpose Flour
1/3 Cup buttermilk
- 1 cup of frozen Raspberries Chopped.
- 190 grs. Of cream-cheese
- 115 grs. Of un-salted butter.
- 200 grs. Of powder sugar.
- 1/8 tsp Vanilla Extract.
- Macarons for decorate.
Preheat your oven to 180 •C.
In a mixing bowl fitted with a paddle attachment, cream together the sugar and butter. Add the eggs one for one and vanilla and cream together until you get a smooth mixture.
Add the dry ingredients and with the speed on low mix together and slowly add the buttermilk and just mix everything to combine.
Add the frozen raspberries
Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn’t mixed.
Scoop the batter into your lined cupcake tin, make sure its only filled ¾ of the way up because they will rise.
Bake for 20 minutes and let cool for about 45 minutes before frosting.
To make the frosting combine together all the frosting ingredients and mix together to combine.
Add the frosting in a piping bag fitted with a large star tip and pipe the frosting onto the cupcakes.
